Actually, nothing at all to do with market, but a general grumble about my inability to get the stone out of a mango without dragging half the flesh with it.

How do they do it in restaurants? Or is it a variety thing like the strawberries we get these days in the shops that never give up their hulls cleanly?

I remember the days…

  1. You cut off both sides of the mango then peel the flesh out of each side. Very easily done when done right.

    Thanks, buuut…

    If I do that the knife gets embedded in that hazy area that’s not quite stone and not quite flesh, and it gets messy. Or when I peel the flesh back, most of it gets left behind.
